1. I love your profile overall and you should be rather unusual in the pool due to your medical doctor + McKinsey + UK/European background. Grades will help too; was this a 1:1 at a Russel Group school in the UK?
2. Breaking into VC as a first role post-MBA can be challenging - especially for those without prior experience in finance (e.g. investment banking, etc.). Some exceptions would be successful founders who have already raised funds, sold companies they started, etc. As such, you may want to give your goals some more thought to ensure you are presenting a feasible path.
3. I'd probably cast a net beyond just the H/S/W 'trilogy', especially in light of your test score and somewhat challenging career plan. Have you considered the likes of MIT, Chicago, and LBS too? (0)
In terms of updating the committee, my view is that this is fine - as long as the school allows for it. I believe that some programs (like Stanford) have a spot where you can provide updates to your online application. I'd be brief and just indicate that you were promoted, with any relevant details (new title, wage increase). I would focus on the changes/autonomy (rather than saying it doesn't change your responsibilities!).
I would only update schools that allow for these sorts of updates - e.g. read the fine print, since some programs are less keen to get data after the fact.
